Lauki Ke Kofte

Bottle Gourd (Lauki- in hindi, Lau - in Oriya) which I never used to eat. ;) One day me and my husband along with another friend went to Mrs. Negi house for dinner. There she prepared Lauki Ke Kofte. For the first time I ate and couldn't believe it was lauki. Really it was amazing, well I have done some alterations from her recipe and prepared it.


Ingredients

For kofte:
Lauki - 2 cups grated and squeezed
Carrot - 1 Large grated
Cabbage - 1/2 Cup grated
Besan - 1/2 Cup (just to bind)
Sesame - 3 tbsp (to get a crunchy taste) 
Garam Masala - 1 tbsp 
Oil for frying
Salt 

For Gravy:
Onion - 1 Large
Tomato - 2 Large
Ginger - 1'' Piece
Garlic - 6 cloves
Curry leaf -8-10
Turmeric Powder - 1/2 tsp
Chilli Powder - 1 tsp
Cummin Powder - 1 tsp
Coriander Powder - 1 tsp
Water - 2 Cups
Salt
Oil - 2 tbsp

Procedure
  1. In a bowl mix the grated and squeezed lauki, grated carrot, cabbage, garam masala, sesame, salt and besan.
  2. Make small balls and fry it. Keep it aside
  3. In a kadai heat 1/2 tbsp oil and fry the choped onion, garlic and ginger.
  4. Let it cool, and bring it to a paste and keep aside.
  5. In the same kadai heat rest of the oil, put the curry leaves & now add the onion-garlic-ginger paste into it.
  6. Cook it for 4-5 minutes at lower flame.
  7. Now add the fresh tomato puree into it along with a pinch of salt. Let it cook for 4-5 minutes.
  8. Now add turmeric powder, red chilli powder, salt, coriander powder, cumin powder and water. Let it cook for few minutes.
  9. Add the Kofte into the gravy and cook for few minutes covered.
  10. Serve hot with roti, naan, kulcha etc...
